White Wines
Young white wines that can age will have flavours of great concentration, good balance and structure and a defined acidity. They will darken in colour during aging and the acidity is softened. The drop in primary fruit character is made up with the increase in complexity.
Red Wines
Young red wines age with a lively colour, its flavor concentrates and acidity is balanced. Red wines tend to soften in colouring through the aging process and soften in acidity and tannin. Tannin quality bears importance on how a wine will soften. Bitter tannin will not soften overtime. Similar to white wines, complexity will increase whilst its fruity character drops.
